Abstract�� OBJECTIVE To optimize the reaction condition of lipase-catalyzed synthesis of conjugated linoleic acid (CLA with L-menthyl in aqueous medium. METHODS Response surface analysis (RSM with 5 factors and 5 levels was employed according to central composite rotatable design. Response surface and contour were graphed with reaction conversion (�� as the response value. The effects of temperature�� reaction time�� enzyme amount�� water content�� and molar ratio were examined. RESULTS The optimal lipase-catalyzed reaction conditions were�� temperature 35 �棬 reaction time 36 h�� enzyme amount 40���� molar ratio 1�� water content 30��. CONCLUSION The established mathematical model is was significant (P<0.05�� and may be applied to the analysis and prediction of the lipase-catalyzed synthesis of CLA with L-menthyl in aqueous medium.
